Yerushalmi Kugel ירושלמי קוגל
Yerushalmi kugel is Jerusalem's sweet-and-peppery noodle kugel with caramel and black pepper, a Shabbos classic.
Fix / add informationYerushalmi (Jerusalem) kugel is served on Shabbos and Yom Tov. It is said to have been created in 18th-century Jerusalem by the Perushim, the Ashkenazi followers of the Vilna Gaon.
It uses thin egg noodles coated in a caramel-like sauce and seasoned with black pepper, its defining ingredient, which gives it a famous kick. It is baked in a ring (Bundt-style) pan or a round flat pan, and is now a fixture at kiddushes and Shabbos tables worldwide.
