P'tcha, also called fisnoga or galareta ("calves' foot jelly"), is a traditional Ashkenazi aspic made from calves' feet, cooked for hours with garlic, then chilled and served cold. The name appears to derive from Turkish words for "leg soup." Once a favorite of the older generation on Shabbos, it is rarer today but still found in some heimish stores.
